Despite its growth, the co-op faced financial challenges and came close to shutting down in 2016. However, the determination of Wilt and her husband to see the co-op thrive led them to take on its financial responsibilities. They not only saved the organization but paved the way for its future. "We just see ourselves as the placeholders for Houston until Houston is ready to take it over," Wilt quips, highlighting their role in nurturing a community-driven foundation.

The arrival of COVID-19 was a surprisingly beneficial twist, as it shifted the community's focus toward nutrition and healthy living. Central City Co-Op seized this moment, responding to the increased interest by expanding their operation days from once a week to six, leading to a new home on Harvard Street in 2022. During this resurgence, the co-op not only became an outlet for local farmers but also rekindled the “grandma skills” of cooking and resourcefulness. Wilt emphasizes that understanding the full potential of ingredients, from carrot roots to greens, empowers consumers to utilize their resources better and reduces waste.
